GREEK YOGURT BANANA CRANBERRY BREAD

Greek Yogurt Banana Cranberry Bread that is delicious for an after dinner treat with tea or coffee or as a snack during the day.

Prep time: 20-15 minutes
Cook time: 55 minutes
Yields: 10 servings 

Greek yogurt banana cranberry bread product

INGREDIENTS

  • 2 cups all purpose flour
  • 1 cup sugar
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup butter, melted
  • 2 large eggs
  • 1½ cups mashed bananas (about 3 large bananas)
  • ⅔ cup Oikos® Plain Greek Yogurt
  • ½ cup chopped walnuts
  • ½ cup dried cranberries, such as Craisins
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Spray a loaf pan with nonstick cooking spray and set aside.
  3. In a large bowl, mix all of the above ingredients, stirring well. Pour batter into prepared pan and bake for 55 minutes or until a cake tester or toothpick comes out clean.
  4. Cool for 10 minutes in the pan on a wire rack. Remove from pan and cool completely on wire rack.
