FRUIT SCONES

Start your day with rich, satisfying breakfast treats studded with dried fruit.

Yields: 16 servings

INGREDIENTS

  • 3 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 Tablespoons baking powder
  • 1 teaspoon baking soda
  • ½ cup unsalted butter (1 stick)
  • 1⅓ cups Oikos® Plain (or your favorite flavor) Greek Yogurt
  • 1 cup dried cranberries, cherries blueberries or raisins, softened*

*To soften dried fruit, simply cover with warm water and let stand for 5 to 8 minutes, Drain well and use as directed.

Note: Other dry fruit like diced dried apricots or currants can be used in this recipe.

DIRECTIONS

  1. Heat the oven to 350°F. Mix the flour, sugar, baking powder and baking soda in the bowl of a mixer. Add the butter and mix until it resembles coarse cornmeal. Add the yogurt and cranberries and mix gently to create dough. (If using a Fruit on the Bottom flavor, mix before incorporating.)
  2. Turn the dough onto a lightly floured board and divide in half. Pat each dough half into a circle approximately 6 to 7 inches in diameter. Cut each circle into eighths, and place on a parchment-lined cookie sheet. Bake the scones for 12 to 15 minutes. Cool and serve as desired.
